touch to toggle / increment internal variable - real start stop chronometer possible

This would allow interactive control of watches functions like chronometers countdown timers faces visibility etc.

Please include the other Android Wear menu items including the ability to start watch apps that may be third party.

I actually wrote a lua script to toggle visibility and set the tap action to run it. It uses a local flag to keep track of the state. It's do-able, but it takes work. As a subset of your request, a tap action to override/force the bright/dim setting would have made it a lot easier. Cheers!
